Honi's Zucchini Lasagna

We had to go to 3 different grocery storys before we found some decent zucchini.. I bought about 5 small Zucs...

I used a foil pan

Pam

3 rounds in saute pan of Olive Oil

3/4 th a bag ofSargento Italian 6 cheese mix

1 can Hunts Fire roasted garlic canned tomatos

A small sweet onion chopped

A bunch of fresh basil chopped

5 sliced small zucchini .. ( The bigger they are the less I would use)

a splash of Penzi's Pasta spice

A splash of Italian seasoning

1 Container of Ricotta part skimmed cheese



Oven ready Lasagna pasta

fresh grated Romano cheese

1 Jar Publix romano and parmesean cheese spagetti sauce * or sauce of your choice

I sprayed the pan with pam ( turned on the oven to 350 to preheat) I sauted the onions and zucs in olive oil ( I have an oil bottle so I did 3 rounds in the pan ) until the onions were transparent and the zuc was soft...I placed a layer of pasta, a mix of sauce, and cheeses then a layer of zuch and onion more sauce a little shredded cheese , a little shredded ramano.. and layered my way up.. Placed pan in preheated oven (350) baked for 30 minutes but could have baked longer..In the future I will cover with foil for 25 minutes then cook uncovered for 30 minutes.. insuring a less runny but still very yummy combination.


Steve loved it but suggest I do do the additional baking next time.. he said the tastes blended well together and the fresh basil made it wonderful.. will add more basil next time...Pictures below:










SO YUMMY not sure about the calorie count but the way we figured it from this foil pan we get 9 servings... so it can not be too bad... so we decided one serving would be equivelent to about 300 calories.. we compared to the WW lasagna florintine.. ...

Looks seriously yummy! I LOVE courgettes or as you Americans' say: "Zucchini".

I LOVE zucchini!!!
I make it in the pan - Slicing it into little coins like you did and then cooking in Pam until lightly browned and then drizzle of Extra virgin olive oil and turn the heat down, sprinkle with a reduced cheese shreds and put the lid on and when the cheese melts it's SOOOO yummy!
I will try out what you made because it looks FABULOUS!
